Flourless chocolate mud pudding
with rich chocolate ganash and ice cream
Serves 10
Ingredients
Chocolate pudding:
750gm milk chocolate buttons
250ml thickened cream
250gm brown sugar
9 eggs
Ganash:
900gm milk chocolate buttons
1.2 Lt cream
60ml Frangelico liqueur
Method
- Melt chocolate and cream together in a microwave at 1 minute intervals stirring constantly until completely melted.
- Using a mixer, whip brown sugar adding one egg at a time until mixture is light and fluffy. Slowly add the chocolate cream until fully combined.
- For ganash, place all ingredients in a pot on low heat stirring constantly until completely combined.
- Grease a muffin tray and pour pudding mixture until ¾ full.
- Place the muffin tray in a deep baking dish and half fill with water creating a water bath. Cover tightly with foil and place in oven at 180C for half an hour. Remove from oven, leave to settle for a few minutes.
To serve
- Pour ganash over the warm chocolate pudding. Add a scoop of vanilla ice cream, chocolate and fresh strawberries
