On Arrival
• A glass of Sparkling Wine on arrival
• Oysters natural with gazpacho salsa
• Roulade of organic chicken with chorizo
• Brandade of cod and chives
• Tuna Sachimi wrapped in mango

Entrée
• Smoked salmon with pickled cucumber, wasabi cream and crispy potato
• Seared scallops with fennel ceviche and chilled lobster broth
• Beef carpaccio with honeyed beetroot, creamy cheddar and parsley vinaigrette
• Spinach and ricotta cannelloni with truffle beurre blanc

Mains
• Whole baby snapper from the rotisserie with lemon arrancini, mixed leaves and yoghurt dressing
• Grilled porterhouse or chicken breast with mashed potatoes, spinach and red wine sauce
• Vegetable parmentier with portobello mushrooms and baby vegetables
• Seafood paella with saffron and Moreton Bay bugs

Dessert
• Trio of chocolate – delicious chocolate ganache, creamy chocolate ice cream & chocolate cigar
• Tiramisu - Layers of coffee soaked sponge, whipped mascarpone and frangelico syrup
• A selection of King Island cheese served with lavosh bread, quince paste and muscatels
