Anthony has cooked for a number of well known individuals over the years – names include: Robbie Williams, Tom Hanks, Mariah Carey, Bruce Springsteen, UK Government Ministers. Celebrity Chefs he has cooked for include; Gordon Ramsey, Thierry Marx and Antonio Carluccio.

Anthony’s career took off in Melbourne at venues such as Le Meridien at Rialto, The Carlton Crest and The Victorian Arts Centre

He soon took off to Europe to spread his culinary wings. (1998) Anthony was invited to work at “Burg Hohenstein” Frankfurt Germany in a private castle fine dining, with two Michelin Stars.

Next port of call was the UK / London where Anthony worked under “Michael Coaker” at Inter- Continental Mayfair one Michelin Star). He also worked at The Washington Hotel Mayfair, Kensington Plaza and Novotel London Tower Bridge.

Anthony returned to Melbourne in 2004 to set up & open ‘The Sands’, Mirvac’s Boutique Golf Club. He has also worked at the popular Como in South Yarra and Number 8 (Crown) under Joe Vargetto and Marcus Moore

After assisting in setting up and opening kitchens during 2006 for BlueFire (Docklands & Melbourne Central), Steakhouse (Pier 35 Marina, Port Melbourne & Docklands) & Saganaki Greek Cuisine & Grill he moved onto his biggest project yet – Head Chef at the new Fish Seafood Grill & Rotisserie (opened 22 Dec 06).
